August 30th Week Meals

If you haven’t checked out Whisk.com, you are missing out! It allows you to save recipes to your account and then place them on the calendar to plan out your week. Monday – Vegetarian Enchilada Casserole + Portabella Mushroom “ground beef”

We are working to have a meatless meal occasionally but are trying out the mushroom alternative. I will go light on the cheese on the enchiladas.

Tuesday – One pan Chicken, sweet potato, kale and craisins

I love a good salad with craisins. I eat the Taylor Farms Kale and Craisins salad almost every day for lunch. This adds goat cheese. It’s going to be so good!

Wednesday – One pan Balsamic Chicken and Veggies

This calls for chicken thighs, but for some reason I just can’t bring myself to cook them… I think it’s because I have never done it well. Chicken breasts, it is.

Thursday – Meatball taco bowls

Is it even possible to eat a version of taco bowls too often? We do it at least once a week. This calls for ground beef but we had a ton of red meat last week, so we are swapping it out for ground turkey or ground chicken.

Friday – Slow Cooker Honey Garlic Chicken and veggies

I’ll sub the soy sauce with coconut aminos and again, chicken thighs for breasts.

Butternut pasta with sausage and spinach

This one is GOOD! Per usual, we subbed a few things.

1. Frozen butternut squash

2. Sweet sausage instead of spicy

3. Banza noodles instead of wheat

It comes from Skinny Taste One & Done .

Ingredients

Salt

1 lb butternut squash frozen

10 ounces pasta of choice

11 ounces sweet Italian sausage

1 tbs whipped butter

1/4 c minced shallots

3 garlic cloves, minced

Fresh black pepper

2 c roughly chopped spinach

2 tbs Parmesan, plus some for serving

4 fresh sage leaves, thinly sliced

Instructio s

Microwave your squash per the instructions on the bag. Blend with 1/4 c water until smooth.

Cook pasta per instructions but reserve 1 c of pasta water. Drain the rest.

On medium heat, brown sausage – breaking it into little pieces as it cookes (4-5 minutes). Transfer to a plate.

Melt butter in medium-low in pan. Add shallots and garlic. Cook, stirring, until golden (5-6 minutes). Pour puréed butternut squash in and season with 1/4 tsp salt and pepper to taste. Stir in 3/4 of pasta water to thin. Add more if needed.

Stir in spinach, Parmesan and sage. Add cooked pasta and sausage. Stir until combined. Serve with extra cheese!

Meals for the week – August 9th

We have been in a rut but to take care of my body means fueling it with what it needs. That’s impossible without having the right food on hand.

I plan Monday through Thursday and stay flexible on the day we actually make it. Life happens!

NSale Workout Picks

I will always start with the disclaimer that you should never go into debt over any of this! Target has some good stuff (and Walmart) with workout clothes too. I got a killer workout top from Amazon for $16.

The Nordstrom sale is open to the top tier loyalty customers and things are already starting to sell out. Make sure that you keep an eye out for things to come back in stock though so people return what they don’t want to keep.

My favorites consist of a log of Ado and Zella leggings and top with a little Adidas thrown in. Shop the items below here or by clicking the image. I’ll be shopping at the “Influencer” cardmember level and will update with things still in stock.

Chocolate Chocolate Chip Cookies

These are the best cookies you will ever eat. Well that is, if you like chocolate and deliciousness and a cookie that keeps its shape.

The original recipe is here, but I did modify. I put my version below.

First, I went with a dutched cocoa powder instead of the regular. It’s a little less acidic and the one I happened to grab out of the pantry. Most stores sell it, but it will be labelled differently than the regular. It has to say “Dutch” in some form.

My second change was that I used some dark chocolate chips. That’s what we keep on hand around here. But I didn’t have a full amount so it ended up being about half semi sweet and half dark chocolate. I need to make a grocery store order….

Third, I left out the nuts. My four year old is allergic to all nuts so it’s a pass.

Fourth, I always use unsalted butter. I didn’t add any extra salt to compensate.

Finally and most importantly, we added marshmallows. Trust me, it’s soooo worth it.

  • 1 cup Butter, unsalted
  • 1 ½ cups Sugars, granulated
  • 2 Egg, whole, raw, fresh
  • 2 teaspoons Vanilla extract
  • 2 cups flour, white, all-purpose, enriched, bleached
  • ⅔ cup Dutched Cocoa powder, unsweetened
  • ¾ teaspoon baking soda
  • ¼ teaspoon Salt
  • 1 cup semisweet chocolate chips
  • 1 cup dark chocolate chips
  • Large Marshmallows

Step 1 Preheat oven to 350 degrees F (175 degrees C).

Step 2 In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

Step 3 Bake for 6 to 8 minutes in the preheated oven, or just almost set. You want them to be gooey because you are going to put them back in.

Step 4 Carefully remove the cookies from the oven and change the over to broil. Top each cookie with a large marshmallow and put back in the oven.

Step 5 Cook for about a minute until the marshmallows lightly brown on top. Take out and cool slightly on the cookie sheets before transferring to wire racks to cool completely.

With the NSale coming soon, you are going to hear the buzz from bloggers and friends alike. Keep in mind, these things will go on sale again. You might find a great dupe at Walmart! Don’t believe the hype to the point that you get click happy.

Slow Cooker Salsa Verde – Sometimes you just need easy

I have been making this crock pot recipe for over a year at this point, and it never gets old. There are periods of time that I make this weekly and keep the ingredients on hand at all times!

The cookbook that the base recipe originates from is Practically Paleo. I make it a little different. One, it’s not in a dutch oven. I’m sure that’s delicious, but the crockpot is wonderful and so easy! I opt for the chicken breasts instead of the choice between breasts or thighs. Chicken broth does well vs the bone broth and the garlic is preminced in a jar instead of smashed cloves. I use regular olive oil instead of extra virgin as I don’t keep extra virgin on hand due to it’s lower heat point without losing nutrients! It has to be easier than the recipe, though this isn’t a complex one. This is hacking the working mom after all.

The recipe in the book lists serving it with crispy plantain chips. They are good! However, my favorite way to serve it is with russet potatoes sliced in long pieces and baked at 400 degrees after being tossed in olive oil, salt and pepper for about 25 minutes (flip halfway through).

slow-cooked salsa verde chicken

  • 3 pounds chicken breasts
  • 1 large onion sliced
  • 1 tbs preminced garlic in a jar
  • 1 jar (24 oz) salsa verde
  • 1/3 c chicken broth
  • 1/4 c tomato paste
  • 2 tbs olive oil
  • 1 tbs paprika
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp salt
  • 2 tsp black pepper
  • 2 bay leaves (don’t skip them)

Throw it all in the crock pot! Seriously…. that’s it 🙂 And cook on low for 5-8 hours. Once done, shred it in the sauce and enjoy! Top with avocado, cilantro, and tomatoes if desired.

Serve on top of russet potatoes, quinoa, cauliflower rice, or your choice of grain/starch!

You use your towels every day. Whether it’s from a shower, washing your hands, washing your face or a million other reasons, towels are vital. Having a luxurious towel can be relaxing and refreshing to you as you start a hard day. I have been on the hunt for new towels for a few weeks now for my master bathroom.

I have looked at Kohls, Target, various online stores and couldn’t find atowel that I liked. In comes Crate & Barrel! I have always loved their items and the quality that comes with it.

Turkish bath towels are such a luxury! They are $10 off their normal price. The standard size towel is just over $20 a towel. Even better, if you buy the set of 6 towels (bath, hand and wash cloth), it is an even steeper discount – though more limited colors.

There are so many good options! Here are a few more that I love and would consider putting in any bathroom. As a bonus, they are all on sale.
